Here's the thing about weekends. As much as we're motivated to get into the kitchen and really make something great come Saturday, there's always a weekend or two each month where we're positively exhausted from the week that's gone by. On those days, all we want to do is curl up on the couch and watch a Scandal marathon with a big bowl of popcorn. Can you blame us? Life gets busy, doesn't it? Even on those busy days, however, we strive to make something delicious instead of caving and ordering takeout Chinese, which is why this recipe really struck our fancy when we came across it on Pinterest. It's the perfect easy, comfort food sort of meal, that, while being simple and fast to throw together, doesn't make us feel like we've totally thrown in the cooking towel. Just look at that cheesy goodness above – it looks positively delectable, doesn't it? There's really nothing like high class grilled cheese. We'd venture a guess that this would be just as good with goat cheese, as well. And maybe a layer or two of prosciutto? Just saying.

Balsamic Blueberry Grilled Cheese Sandwich
2 slices of bread (I used sourdough)
Plenty of white cheese (I used Havarti, but lots of others kinds would be good! Mozzarella, Monterey, or even Swiss would be yummy)
Fresh spinach or arugala
1/2 cups fresh or frozen blueberries
1 tbs balsamic vinegar
1 1/2 tbs. brown sugar
1. In a small saucepan, combine blueberries, sugar and vinegar. Turn on medium heat and let come to a slow boil. Use a utensil to crush berries as you stir. After boiling for about 5 minutes, pour mixture into a mesh strainer and let the juice syrup separate from the solid berries. Save the syrup for cocktails, pancakes or both!
2. Spread blueberries onto a piece of bread, top with cheese, some spinach, then more cheese! Sprinkle with fresh ground pepper. Top with your other slice of bread and toast. Enjoy!
